Why garlic loses juiciness: Common harvest and curing mistakes

Garlic that loses juiciness or begins to sprout before the first hard frosts is often the result of errors during harvest and curing rather than variety. Mistakes in timing, extraction, or trimming can turn bulbs into dry husks. To preserve the harvest until the following summer, gardeners must follow a specific sequence of preparation and storage. Determining Maturity and Harvest Calendar dates are unreliable for timing a garlic harvest because weather conditions vary annually. Instead, gardeners should rely on visual indicators: the lower leaves must be yellowed and noticeably dried, and the protective casing on the flower clusters should begin to crack, exposing the bulbils.
