In the United States, recurring outbreaks of cyclosporiasis—an infectious disease caused by Cyclospora parasites—have highlighted risks associated with raw produce. The infection typically manifests as gastroenteritis, characterized by intense diarrhea and cramping abdominal pain. Sources of Infection According to Taylor Wallace, a nutritionist at Tufts University and CEO of Think Healthy Group, fresh greens are the primary vector for the spread of the infection in the US. Parasites are frequently found on leafy vegetables that are consumed raw without heat treatment. Wallace specifies that outbreaks are most commonly linked to products such as basil, cilantro, dill, cabbage, broccoli, and peas.
