The success of homemade wine depends less on the sugar quantity or berry variety and more on how vigorously the yeast begins its work. Adding dry granules directly to the must can lead to sluggish fermentation or off-flavors. Pre-activating the yeast is a practical way to verify culture viability and provide a head start before the main process. There are two primary approaches to fermentation: using lab-grown cultured yeasts for stable results, or relying on wild yeasts found on fruit skins and in the air.
