WHAT’S COOKING: Pancetta-wrapped chicken parcels with a fennel forcemeat stuffing

Here’s a traditional way with chicken – breast fillet with a stuffing – that features pancetta and fennel. It’s delicious and makes a showpiece dinner table main course. But for us it was just supper.
